The eezy "cheesy"

 Recipe feeds 2-3 people 


  • 1/2 Cup of  raw cashew's 

  • 1 medium carrot 

  • 1 1/2 potatoes

  • 1/2 an onion 

  • 4 table spoons of nutritional yeast 

  • 2 cups of pasta (i use gluten free) 

  • bunch of spinach 

  • 2 table spoons of coconut cream


Completely cover the cashews in a bowl full of boiling water and let soak for 30 minutes if you're using a blender, i don't soak mine i just chuck them into my food processor. in the meantime, chop the carrots, potato, onion and put them in to a pot to boil. In another pot add and boil the pasta (gluten free one normally takes 15-20 mins). Rinse the cashews and add into blender cup, when veggies are ready add them in with the cashews, then add in the nutritional yeast in, add 3/4 a cup of the water used to boil the veggies, add 2 table spoons of coconut cream, a pinch of pink salt and pepper, 3/4 cup of almond milk and blend blend blend (your sauce is ready) . Drain the pasta and divide into 2 bowls, pour over the cheesy sauce and add chopped spinach to it.
