The jackfruit of the sea  

Recipe feeds 2 people 


  • 1 can of jackfruit (you can use fresh i just haven't found any)

  • 2 red apples

  • fresh corn

  • half a head of lettuce 

  • a bunch of spinach 

  • 2 tomatoes 

  • 3 table spoons vegan mayo

  • half a lemon 

  • 1 medium potato 

  • 1 table spoon nutritional yeast

  • 1 teaspoon bbq sauce

Firstly chop potato up into blocks and put in pot to boil. Then drain jackfruit and place into bowl, use a fork to shred the jackfruit then add the vegan mayo, bbq sauce, a squeeze of lemon, a pinch of himalayan rock salt, a pinch of pepper, a table spoon of nutritional yeast and mix together. In another large bowl add in the chopped up lettuce, spinach, chopped up tomato, chopped up apple and corn. Then add the jackfruit on top. Once the potato is soft and ready drain and add to salad. Sprinkle nutritional yeast over the top and enjoy :)
