The holy guacamole 


This recipe feeds 2 people


  • 1 1/2 potatoes 

  • 1 carrot 

  • 1 avocado 

  • 1 tomato 

  • 1 onion 

  • 1 capsicum 

  • 6 flour wraps, i used medium sized ones (this is if 

  • you are making oil free ones. If not 1 bag of store 

  • bought nacho chips.

  • 4 table spoons nutritional yeast 

  • 1/4 cup of cashews 

  • 1/4 cup of coconut cream 

  • 1/4 red onion 

  • salt and pepper

  • mexican spices 

  • dash of dairy free milk 

  • 1/2 refried beans 

First things first, soak your cashews in boiling water for 30 - 45 mins. Then boil in a medium pan the potatoes the carrot and half of the onion. In the mean time put your grill on and pop in the flour wraps (i think mine took 10 - 12 minutes on medium 180, keep checking on them so they don't burn) that is if you are making oil free ones. In a medium pan fry onion and capsicum (i poured a little water in the pan and used mexican spices) saute for 5 minutes. Once the wraps are golden brown take them out of the onion and cut into triangle pieces. To make guacamole, smash avocado add in half a squeezed lemon, salt, pepper and finely chopped red onion. To make your 'cheese' sauce drain the cashew's and add into blender cup, then add in the potato, onion, carrot, the nutritional yeast, the coconut cream, a little water you used in boiling your veggies and a dash of dairy free milk, blend blend blend! and you're sauce is ready. Cook your refried beans according to instructions on can. Pour cheese sauce over  your chips either oil free ones or store bought, add on chopped tomato, your capsicum veggies, your refried beans and guacamole. You can add anything to this recipe if you want corn, salsa etc.  The only thing that changes with the deep fried nachos is you use store bought nachos, oh and i added jalapeños.
