The scrambled soy 


Ingredients (recipe makes for 2 people) 

  • A whole  block of firm tofu 

  • a handful of spinach 

  • 4 slices of gluten free bread or bread of your choice 

  • a bunch of spinach 

  • 2 tomatoes 

  • 3 table spoons nutritional yeast

  • a teaspoon of soy sauce

  • 1 teaspoon cumin 

  • 1/2 a chilli 

  • 1 table spoon tomatoes relish 

  • 1 avocado 

  • 1/2 teaspoon coconut oil


Firstly chop the tofu into blocks and put into a big bowl, using a fork crumble into small pieces. Put your fry pan on medium and add a little bit of coconut oil to it. Once the pan is hot add your tofu, then add in your nutritional yeast, soy sauce and cumin. Let cook for a 5 minutes (keep stirring it) . Chop up your tomatoes and add to tofu pan, also add in your spinach and let your ingredients cook for a couple of minutes, in the meantime put your toast on and once ready spread avocado on each piece evenly. Once tomatoes are soft and spinach is weltered your tofu scramble is ready. Add on to toast and add tomato relish and chopped up chilli on each slice.
